My Mom's Blini Recipe

It is called Siberian Blini. To get the right blini quality you'd better find cast iron skillet (Wal-Mart sells one for $6.97!)

Ingredients

Flour 3 cups
Water  3 cups
Baking soda 0.5 tsp
Salt 0.5 tsp
Egg 1
Milk 1.5 cups

           Add flour to the water while stirring, add salt and soda. Mix thoroughly until batter is uniform and thin. Add cold milk and mix. Add 0.5 cup of hard boiling water and let the mixture cool down. Then add an egg and mix. Mixture should be really thin (thinner than you'd expect it to be, this will make blini thin and lacy).

Heat the skillet with a tablespoon of coarse salt (any salt will do though). After heating for 3-4 minutes throw the salt away and dap the surface with any oil (I prefer lard). You're ready to bake your blinis!

The tradition is that the first one is a lump - it's OK, you can throw it away, but if you follow all the steps, you may eat your first blin!
